“Imonikai” (imoni parties) are a seasonal event held throughout Yamagata Prefecture. Imoni is a type of hot pot cuisine made with a root vegetable called satoimo, and the flavor differs slightly by area even within Yamagata. At our restaurant, we make it with a light soy-sauce based flavor.

Dashi Yakko and Dashi Rice, traditional Yamagata home cooking. Natto, kombu kelp and a mixture of finely chopped ginger, eggplant, perilla leaf, and cucumber are added to dashi broth and served on top of tofu or steamed rice. Add soy sauce or shichimi spices to taste and enjoy.

We source our horse sashimi directly from Shirataka, an area on the Mogami River famous for its horses. We serve carefully selected thigh meat, which is is lean also on the inside. Add garlic dressed with slightly sweet soy sauce or ginger to taste and enjoy.
